For a light, happy & yummy start into Spring: homemade, gluten-free bread from Sweden

After talking about money anxiety and self-worth on Tuesday (such a heavy topic for many of us), I wanted to send you something a bit more light, fun, and yes YUMMY this weekend:)

You might know this about me already by now, but I LOVE FOOD... good, healthy, nutrient-dense food that makes me feel happy and energized in my body and mind. I love trying new things and don't shy away from being adventurous with what I eat and how my body reacts to it (as a German -& Bavarian at that!- I grew up eating a ton of animal parts that most people in the US crinkle their nose at, which I think is kind of funny :)).

Anyway, my point is that I believe that food is an essential part of well-being. In fact, food can be both poison and medicine depending on your individual body. I am not just talking about how we look and how healthy we are physically, but just as importantly how happy and emotionally sound we are. There is numerous research that shows that what we eat drastically affects our mental states and that a diet full of processed foods, GMO's, and high-sugar content adds to depression, anxiety, impaired memory... the list goes on (of course food is only one component... exercise, sleep, environmental toxins, and stress also play huge factors in our physical and mental well-being).

But, let's keep it light today... 

So , without further ado, I want to share with you this delicious and simple recipe that  Raz's (my fiance) friend Robert (who is an amazing CrossFit coach... he kicked Raz and my butt :)) showed me when he was visiting from Sweden a few weeks ago. I have been OBSESSED ever since. Who knew that baking bread at home could be so easy?!?!

 

Step 1: Heat your oven to 480 Fahrenheit

Step 2: Mix the following ingredients with a spatula (no need for en electric mixer): 

- 1 cup almond flour 

- 3 eggs if they are large, 4 if they are small

- 1/2 cup coconut oil

- 2-4 tbs of a seed or a mix of seeds you like (depending on how nutty you like your bread. Personally, I love having a lot of seed). Ex: chia, flax, hemp, sunflower, pumpkin

- 1 -2 tbs walnuts

Step 3: pour the mix into a 9"x9" pan and distribute evenly

Step 4 (optional): sprinkle some sea salt flakes on top

Step 5: put it into the oven for 15 minutes (Note: I have found the timing to be slightly different, so the best way to tell if you bread is ready is by using a wooden toothpick: poke to the bottom of you bread and if the toothpick comes out clean and without any dough on it, you are good to go. Step 6: Enjoy the goodness with a loved one in a calm and relaxed atmosphere. Add some avocado, nut butter, or coconut butter or simply enjoy it along with your eggs, soups... anything really.

NOTE: Personally I make a bunch of bread at once (just doubt the measurements above and use a bigger pan). Then I cut it up into squares and freeze it. It tastes delicious toasted as well.
